Tapping the Trees

Each spring, taps are gently inserted into mature maple trees at certified organic groves in Quebec and Vermont.

Collecting Pure Sap

Fresh sap flows through food-grade tubing into stainless collection tanks, untouched by human hands or additives.

Small-Batch Evaporation

Sap is gently reduced in wood-fired evaporators, concentrating natural sugars and developing the signature maple depth.

Graded & Bottled

Each batch is graded by colour and flavour intensity, then bottled in glass or eco-packaging for the Japanese market.

Our certification means every grove we source from operates without synthetic pesticides, herbicides, or fertilisers. The groves are inspected annually by accredited third-party certifiers meeting both USDA Organic and Japan Agricultural Standard (JAS) requirements.

All commercial maple syrup is Grade A, now sub-classified by colour and flavour intensity: Golden (delicate flavour), Amber (rich flavour), Dark (robust flavour), and Very Dark (strong flavour). Lighter grades come from early-season sap; darker grades from later in the season. Neither is superior — they simply suit different uses.

Yes. Our Organic Maple Sugar substitutes 1:1 for refined white or brown cane sugar in virtually all recipes. Because it carries a more complex flavour profile, many bakers reduce the quantity by 10–15% to let the maple note shine through without over-sweetening. It also dissolves beautifully in beverages.

Unopened maple syrup can be stored at room temperature for up to two years. Once opened, refrigerate and use within 12 months. Maple sugar should be kept in an airtight container in a cool, dry environment away from direct sunlight — it will keep indefinitely if moisture is excluded. Maple candies are best consumed within 6 months and kept at room temperature in their sealed tin.
